With the Sindhi New Year just round the corner, here’s a
recipe for thairi, the star of a Cheti Chand meal.
Ingredients
2 cups basmati rice (washed and soaked)
2 cups water
1.5 cup sugar
2 tbsp pure ghee
4 crushed cardamom
Saffron 1/2 pinch
Kesari colour 1/2 pinch
1 bay leaf
12 sliced almonds for garnish
Method
Heat ghee in a cooker and add bayleaf and crushed cardamom.
Now, add the rice and saffron and stir on high flame for two minutes. Add
water, sugar and kesari colour. Pressure-cook for three whistles and then
simmer on a low flame for 5-6 minutes. Turn off the heat and let the steam
escape after 15 minutes. Garnish with almonds and shahi jeera. Serve hot.
